I'm no great shakes at coding but I have managed to suss out some changes.
I want to be able to add some text to stand out before the auction listings so would probably be better in a table.
I've mocked up a picture of how it could possibly look;

Can anyone give me an idiots guide on how best to do it?Many thanks in advance.

You can either modify the product_list.html template and add whatever you want there.
Or you could implement a block that appears there using a delegate class.
